Spicy Baked Fish with Grape Chutney

Ingredients

500g

White fish

Fish Marination
5 cloves

Garlic

3 nos

Shallots

35g

Coriander leaves

3 slices

Ginger

2 tbsp

Lemon juice

Dry chilli, soaked and deseeded

1/2 tsp

Cumin powder

1/2 tbsp

Garam Masala

2 tsp

Salt

1 tbsp

Oil

1/4 cup CARNATION® Evaporated Creamer
Chutney
15 nos

Grapes, seedless and cut into half

35g

Coriander leaves

1 no

Green chilli, deseeded

1 no

Red chilli, deseeded

4 cloves

Garlic

2 tbsp

Lemon juice

2 tbsp

CARNATION® Evaporated Creamer

1 tbsp

Chilli sauce

A pinch

Salt

Instruction

Step 1

Combine all fish marination ingredients in a food processor and blend until a paste is formed.

Step 2

Marinate the fish with the paste for at least 1 hour or best overnight.

Step 3

Preheat the oven to 200°C and bake for 10-15 mins.

Step 4

For the chutney, blend all the ingredients except for grapes in a food processor and then combine with the grapes.

Step 5

Serve the baked fish with the grape chutney as side dish.
